[Cooking] Salmon Experiment

So, I tried doing the Brazilian salmon today. It came out pretty well, but the chili powder -- despite being a milder one -- was still a little overwhelming for everyone. The recipe was good, though, so I need to figure out if I can find a milder powder, or else a seasoning I can substitute in for the chili powder.

Any thoughts would be welcome. The salmon, for reference, is marinated in a mixture of lemon juice, orange juice and salt. Then rubbed in a mixture of brown sugar, orange zest, minced garlic and chili powder before baking. I may try just toning down the amount of chili powder, but if anyone has ideas for substitutions I'd love to hear 'em.


I'd suggest, rather than full-fledged chili powder, using a mixture of powdered ancho chili with a touch of cumin and perhaps cinnamon.
That's actually what I used, the mixture. Ancho chili, cumin and a touch of cinnamon. (Well, and a dash of oregano as well.) It was still a bit overpowering. :/
